What is Crawfish?
Crawfish are freshwater crustaceans closely related to the lobster. They have a shell and five pair of legs. As they grow, they molt their shells and grow new ones. They are also known as crawdads, crayfish, and mudbugs, (they don't eat mud, they just live in it sometimes and they are not bugs).
How do you tell a Male Crawfish from a Female One?
Turn them over and look for two short fat "legs" between the head and tail. These are male organs. A mature male also has little "hooks" at the base of the last two pairs of legs.
Can I bring outside food or drinks into Crawfish Shack?
Our restaurant is "Bring Your Own Booze" meaning we allow outside beer/alcohol. Outside non-alcoholic drinks and/or food is NOT permitted.

Where are the baby Crawfish?
The female crawfish lays eggs which become fertilized and attached under her tail. The average crawfish produces about 300 eggs which take 2-4 weeks to hatch.
How long do Crawfish live?
Crawfish live about 3 years if not caught sooner. They reach maturity anywhere between 4-6 months.
Why would I want to
suck the head of a
boiled Crawfish?
It contains the pancreas, commonly known as the "fat" and is very rich in flavor. If the fat doesn't come out when you break off the tail, either suck the head or get it out with your finger, but don't miss out on this part of the crawfish.
Are Crawfish healthy for you?
Yes, the average serving contains 16 grams of protein and only 1 gram of unsaturated fat. It's rich in Vitamin A, Calcium, and Iron, and contains only 75 calories per serving.
Why do some boiled Crawfish have straight tails?
When live crawfish hit boiling water, they curl up their tail. If they don't, they were probably dead before cooking. Good rule of thumb, if the meat falls apart, don't eat it.
How do I keep Crawfish alive until I boil them?
Keep them in the sack and cool with ice, but not submerged in water. A large ice chest works great with the drain spout open and the lid cracked for breathing. Properly wash the crawfish by submerging 2-3 times in clean water. Let them soak for 20-30 minutes the last time. Use of salt on final cleaning is fine but must be boiled within hours or will die.
